On food and festivals

Beef Wellington is my guilty pleasure but is reserved for the Christmas week, so cooking it in the middle of summer felt wrong.

As a result, the overall dish was as seasonal as possible: venison, sherry and lingonberry sauce, and black truffle duxelles. The hispi cabbage is served raw (after a few hours of compression with brine) with a sunflower emulsion and caramelised seeds:
