On anniversaries
This week marks a few round dates for me – from settling on this island half a decade ago, to meeting Sasha a year before that, to crossing through 200 gym sessions since January.
One way to celebrate was to head to Kol, a Mexican restaurant that tries to use mostly British ingredients and made it to my list of places to visit quite a while ago.
There were numerous delicious dishes in the tasting set, but this British wagyu taco with cascabel and rosé wine was one of the most memorable, probably because they turned a usually fat and tasteless piece of wagyu into a rich and umami-forward carne asada.
