On taking time

Last week I teased my dessert in progress, and these are the final results:

The trickiest part was to make sure the outer level is thin enough to add only a hint of chocolate bitterness, but also is strong enough to hold the weight of defrosted ganache. The layers inside were a mix of hazelnut biscuit (next time I will make it thicker), vanilla caramel, and lots of praline.
